According to Donovan Talbott, orchard and shed manager at C&R Farms, Palisades area of Colorado, the key to the best peach is the higher alkali balance in the pH of the water on the Western Slope, a quality that produces a sweeter taste in their peaches. However, Talbott says that the handling of the peaches is also critical in preserving optimum flavor. After allowing the peaches to fully ripen while still on the tree, employees are picky in selecting only the best peaches for immediate delivery. Having the peaches go from the tree to customers in 24-48 hours is the final factor in ensuring great taste.
